Lots of people email us asking for the recipes for the food they have enjoyed on their tours with us.

See below for some of the favourites, including beer bread, maple salad and our delicious kayak cookies.

Beer Bread

2 cups white flour
1 cup whole wheat flour
½ cup sugar
1 ½ tsp baking powder
1 tsp salt
1 bottle of Rickard’s Red (or other sweetish dark or amber beer)
3 Tbsp canola oil
1 Tbsp honey

Mix dry ingredients in a large bowl and wet ingredients in a smaller bowl. Pour the combined wet ingredients into the bowl with the dry ones and combine over 2-3 times. Put into an oiled pan. Bake for 45-55 min at 375 F / 190 C (not convection).

Kayak Cookies

1 cup chocolate chips
1 cup unsweetened coconut
1 cup chopped walnuts
2 cups quick cooking oats
2 cups flour
1 cup brown sugar
1 cup butter or margarine
1 tsp vanila
1 egg
1/3 tsp salt
1 Tbs baking powder

Preheat oven to 375 degrees Fahrenheit. Prepare a well greased cookie sheet. Mix the butter, sugar, egg and vanilla together until creamy. Combine the dry ingredients together in a separate bowl. Combine the two together. You may need to use your hands, the batter is very dry. On a greased cookie sheet, form the cookies into the size you like. Pat them down with your hands or a fork, otherwise they will fall apart while cooking and eating.

Bake for 18 – 20 minutes. Remove from the cookie sheet immediately and cool on racks.

Maple Salad
Per person:
1 tablespoon canola oil
1/2 tablespoon maple syrup
1/2 tablespoon apple cider vinegar

salt & pepper

Ingredients: lettuce, craisins, pecans, apple, old cheddar, feta
